 The Destemmer basic operation is relatively straightforward: grapes are loaded into a hopper and transported inside a polyethylene or stainless steel cylinder with holes so that a pounding shaft can separate the grapes from their stems. The product is now sent to be crushed, which may be done by the same machine. De-stemming is the term for the process of removing the grapes from the stems. With this method, tannins in wines that already have texture, mouth feel, and a feeling of flavour are kept to a minimum.
